As promised in last week'swinter soup party post, today I'm sharing our go-to, delicious and healthy winter soup recipes.

I say we, because in fact these are my husband's soup recipes and we even recorded a little video for you below to share how we made them! 😊

3 Winter Vegetable Soup Recipes

These soup recipes are so simple to make with ingredients you probably have at home, but they pack a punch in terms of flavor and are a hit with adults and kids alike. Especially when we add all the wonderful toppings we shared last week in winter soup party!

My husband cooks for our family most days; I know, lucky me! 😉 So when it came to our winter soup party menu, I knew I had to turn to him for his delicious soup recipes!

My family lives on soups in winter and we love to serve it for brunch or a casual dinner party too as you probably saw in last week's post.

Soup parties are a perfect, cozy way to entertain in winter. But these soup recipes are delightful and delectable to make for yourself or your family on a weekly basis in winter.

The ingredients for each soup are super simple and readily available (no molecular gastronomy here), which makes for a great and inexpensive dinner party dish too!

Our favorite soup flavors (mine and the kids') are carrot, broccoli and sweetcorn.

These are versatile flavors that lend themselves really well to virtually any topping, which makes them perfect for a soup party buffet type of scenario; where each guest can construct their own soup bowl with toppings and side dishes on offer.

As you probably saw in last week's soup party post, we served various cheeses, cured meats, breads and toppings to accompany our soups. But you can pretty much serve what you fancy and what your family likes! Think chopped herbs, creams, croutons or even shredded chicken or pork.

The basic recipe for these soups is pretty straight forward too, which means you can vary the vegetables to suit the seasons and your tastes too.

And by all means, do not stop at carrots, broccoli or sweetcorn! Tomatoes, parsnips, watercress, pumpkin, courgette etc would be great substitutes!

3 Winter Vegetable Soup Recipes

These winter vegetable soup recipes are delicious, quick & easy to make, and perfect for a winter dinner party or a soup bar!

ingredients


  • 2 cloves or garlic peeled and roughly chopped
  • 1 medium onion roughly chopped
  • 500 g of chopped vegetables of your choice (we used carrots, chopped broccoli with stalks and a can of sweetcorn)
  • 1 vegetable or chicken stock cube
  • 1 tablespoon of butter
  • 1 tablespoon of cooking oil
  • salt and pepper to taste

instructions


  1. In a deep saucepan add oil and butter and heat until melted.
  2. Add garlic and onions and saute until onions are translucent.
  3. Add the chopped vegetable and stir for about five minutes.
  4. Crumble the stock cube in and stir. Add water to cover the vegetables, and simmer until the vegetables are cooked and soft. For the sweetcorn, since it's already cooked, simmer for only about 10 minutes for flavors to develop.
  5. When the vegetables are cooked, blend the content of the soup pan until you get a smooth texture.

NOTES:

Serve the soups immediately or refrigerate for up to one week. Heat the soup on the stove top when ready to serve.
