However, if you like to complete meal prep in advance, then you could make a meat filling for your zucchini boats in advance and pop it into the freezer in a sealed freezer bag. It should keep for about 2 months.

When you're ready to serve your zucchini, then simply cut your fresh zucchini, scoop out the flesh and top each half with your thawed filling. Top with your favorite cheese and bake.
