This Southwest Turkey and Egg Breakfast Skillet is a delicious and filling way to start your day! Southwest seasoned ground turkey and scrambled eggs are topped with cheese, tomatoes, avocado, cilantro and salsa. It’s perfect for meal prep, a weekend breakfast or even dinner!

Why you’ll love it

High protein breakfast – Having a high quality breakfast with plenty of protein is a sure fire way to keep you from hitting a wall later in the day. Protein is satiating and a great way to rebuild muscle.

One pan – You know I love a good one pan dinner, so why do the same for breakfast! No need to dirty multiple pans when you make this breakfast skillet.

Meal prep – If you struggle to make breakfast in the mornings this hearty egg skillet is perfect for meal prepping. Make it on a Sunday then all you have to do is reheat portions in the morning.

The Ingredients

  • Ground turkey – I like to use 90/10 ground turkey. The flavor is better and it won’t dry out as much as extra lean.
  • Chili powder, cumin, garlic, smoked paprika – The spice blend to season the turkey.
  • Onion – Yellow or white onion can be used.
  • Salsa – Use your favorite jarred salsa. Red or green salsa can be used.
  • Eggs – A combination of whole eggs and egg whites are used.
  • Milk – Any type of milk can be used.
  • Hot sauce – If you like a little heat in your food, add a few dashes of hot sauce.
  • Cheese – Gooey and so good mixed in with eggs.

How to Make Turkey and Egg Breakfast Skillet

Whisk together the eggs, egg whites, milk, hot sauce, salt and pepper.

Sauté the ground turkey and onion in a skillet. Stir in the dried spices and then pour in the salsa. Mix everything together and then put it onto a plate.

Add a little oil to the skillet and then pour in the egg mixture. Scramble the eggs as you normally would.

When the eggs are nearly cooked, add the turkey mixture back in and stir until combined.

Top with the cheese and continue to cook another 1-2 minutes or until the cheese is melted. Add all of your favorite toppings and then serve.

Southwest Breakfast Skillet Toppings

  • Avocado
  • Diced tomatoes, onion, and cilantro
  • Salsa or pico de gallo
  • Plain Greek yogurt or sour cream
  • Crushed tortilla chips

Ways to Serve a Breakfast Skillet

This is a hearty breakfast to serve on it’s own, but it does come up short on carbs. I recommend adding a serving of carbs using one of the suggestions below.

  • Serve with a side of sourdough or whole wheat toast.
  • Use it as a filling for breakfast tacos or burritos.
  • Add it to plain oatmeal and make savory oatmeal, like I did with this southwest savory oatmeal.
  • If you make it for dinner (brinner) serve it on top of white or brown rice.
  • Eat it on top of a toasted english muffin or make a bagel breakfast sandwich with it.

Storage and Leftovers

Once the breakfast skillet has cooled, transfer it to an airtight container and store it in the refrigerator for 3-4 days.

Reheat in a skillet on the stove over medium-low heat until warmed through or you can reheat it in the microwave.

Can you freeze scrambled eggs?

Yes. Since this breakfast recipe contains scrambled eggs, it’s an excellent option for freezing. Simply cool the turkey and egg skillet completely and then freeze in an airtight container for up to 3 months.

Defrost the eggs in the refrigerator before reheating using one of the methods listed above.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground turkey, I use 90/10%
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon granulated garlic
  • 1/2 cup diced onion
  • 2 tablespoons water
  • 1/2 cup salsa
  • 6 eggs
  • 2 egg whites
  • 2 tablespoons milk of choice
  • Hot sauce to taste (optional)
  • Kosher salt and freshly ground black pepper to taste
  • 1/2 cup shredded cheese, I used Colby Jack
  • Chopped tomatoes, avocado, red onion, cilantro and extra salsa for toppings (optional)

Instructions

  1. In a large skillet heat the olive oil over medium heat. Add in the onion, ground turkey and spices. Season with salt and pepper. Crumble the turkey and sauté until cooked through. Add in the water and salsa and stir everything together. Remove the mixture from the skillet onto a plate.
  2. In a large bowl whisk together the eggs, egg whites, milk, salt, pepper and hot sauce. Spray the skillet with cooking oil or additional olive oil and lower the heat to medium-low. Pour in the eggs and stir them until scrambled. Just before they are finished cooking add the turkey back in and stir everything together.
  3. Top with shredded cheese and cover the skillet with a lid or top loosely with foil until the cheese melts, about 1 minute. Serve the skillet as is or top with chopped tomatoes, avocado, red onions, cilantro and extra salsa.
