Right before I got married, I decided that I had better learn how to cook so that my husband wouldn’t change his mind about our marriage. 🙂 I remember that it was about 2 weeks before our wedding day and I sat down to watch an episode of Martha Stewart on TV. She was demonstrating how to make a pot roast in your slow cooker and she made it look so simple. I watched the entire show and took very detailed notes so that I could recreate this perfect dish for my new husband.Well, after we had been married for a couple of weeks, I decided to show him my “domestic” side and make this Martha Stewart dish. Unfortunately, I ended up grabbing a few wrong ingredients at the store (i.e. condensed tomato soup instead of the tomato sauce that I needed) and couldn’t remember some of the steps in the recipe, but I gave it my all.

Unfortunately, it was a HORRIBLE failure. It was dry, burned, and tasted weird. And condensed tomato soup is not a good substitute for tomato sauce. From that point on, my husband did the cooking for the first three years of our marriage.

I am not even joking.When I made the decision to be a stay-at-home mom after my first daughter was born, I told myself that I needed to try this cooking thing again. I pulled out my slow cooker and searched the internet for simple recipes.

I now consider myself a slow cooker master. 🙂 I still use my slow cooker 3-4 times every week and I am always looking for the next best recipe! I came up with this one a couple of weeks ago when I was trying to make dinner using only things in my pantry. It was simple and delicious- I think that next time, I will try it using fresh pineapple!

Ingredients

  • 6 boneless, skinless chicken breasts
  • 20 ounces pineapple slices 1 can, juice reserved
  • cup brown sugar
  • ¼ cup lemon juice
  • 2 Tablespoons soy sauce
  • ½ teaspoon ground ginger
  • ½ cup cornstarch (could add less if you want sauce to be thinner)
  • ½ teaspoon red pepper flakes (optional, more or less depending on heat level you like)

Instructions

  • Spray slow cooker with nonstick cooking spray.

  • Place chicken breasts inside slow cooker and place pineapple rings on top of chicken.

  • In a separate bowl, mix together remaining ingredients and pour over chicken.

  • Cook on low for 5-7 hours or high for 3-4 hours.

Notes

  • Serve over rice and garnish with green onions (optional).

    Thanks for this recipe! I made it for my hubby last week (I'm too picky, and he doesn't get home till after the kids are in bed, so I usually make separate meals). He liked it a lot, but my corn starch ended up in clumps, and the sauce was just liquidy.. Do you know a way to get around that?

    The only thing that I can figure is that maybe you didn't mix your ingredients together well enough before adding them to the slow cooker. I mixed and mixed until there were no clumps left and I didn't have any problems. Maybe the sauce was liquidy because the cornstarch wasn't mixed in well. Just guessing....we didn't have this problem. So sorry.

    I googled this recipe this morning b/c I had chicken & a pineapple & didn't know what to do w/ them. I only had one lemon & lots of oranges so I mixed those up, had everything else in the pantry. Turned out great!!!! Thanks so much!!!

    I made this last week, and have to be honest - it was pretty bad. Within two hours, the sauce burned in the crockpot, even though it was on a low setting. It was gummy, and the flavors did not compliment each other well. I usually like things on this blog, but would urge the readers to stay clear of this recipe.

    My sauce didn't burn and it wasn't gummy (I added less cornstarch than called for), but I do agree that the flavors did not compliment each other very well. I was worried about the lemon and pineapple--because I don't think I've ever seen those two together--so I thought about skipping the lemon juice but didn't. If I had this might have been better. Maybe. Thanks anyway, ladies!

    This recipe sounds delicious! I am brand new to using a slow cooker, so I have a question. When recipes say something like "5-7 hours," is there a significant difference in how the food comes out at either end of the timeframe? Or are those last two hours basically just keeping it hot? Thanks!

    Crock pots vary slightly (the different brands). Also gives you a little cushion for time in case you aren't quite home from work yet or run into a problem. You are ususally ok if your slow cooker is on low and there is still liquid in it.

    Yes, add the reserved pineapple juice with the other ingredients after you put the chicken an pineapple rings in the slow cooker.

    This recipe sounds wonderful, slow cooker pineapple glazed chicken, BUT does not 1/2 cup of corn starch sound like an awful lot for the rest of the recipe???? Everything else sounds "yummee". I've never seen a recipe like that just to thicken up the sauce.............. Thanks so much

    Hi Verna!I know that it seems like a lot, but that really is the amount that I used. In the picture, you can see that it really is a pretty thick sauce. However, this recipe would work just fine even if you cut the cornstarch in half or even only used a quarter of the amount called for. I just like a really thick sauce to cover my food, but I know that others do not prefer it that way. Just add as much or as little to your liking. :)I hope that helps!Have a great night,Camille

    I have to agree with the other two reviewers. This was not a good recipe. Not only did the flavors not complement each other, there was also no distinct flavor. I could not taste the soy sauce, pineapple, or brown sugar at all. It all just blended together for a weird flavor. I was very disappointed after I made this to not only have a dinner that did not taste good, but to waste money on all the ingredients. I am just glad my toddler loves rice so much and I was able to at least feed her the rice. I would steer clear of this recipe.
