One of the things I always have handy in my pantry are canned tomatoes, and they’re something I highly recommend you keep stocked if you want to spend less time in the kitchen. For this recipe, my go-to is Muir Glen Organic Tomatoes. You can buy them at your local Kroger family store.

I love to add fire-roasted tomatoes to my stews, but I don’t always have the time to roast them. Lucky for you and me,Muir Glen has the Crushed Fire Roasted tomatoesready for you to use. Their tomatoes go from farm-to-can in eight hours or less, and their flavors add a lot of depth and complexity to any dish you use them with!

This recipe for Beef in Tomato Sauce with Swiss Chard is adapted from one of my mom’s recipes. My mom would cook beef steak and always add vegetables to these types of dishes. The addition of vegetables such as squash, carrots, peas, chayotes, potatoes, and Swiss chard to tomato-based plates is a very popular custom of home cooks in Mexico.

Easy recipe for a beef stew

You can find Muir Glen Organic Tomatoes at your local Kroger, King Soopers, City Market, Fry’s, Fred Meyer, Smith’s, QFC, and Ralphs. The Muir Glen Brand uses Non-BPA cans, and their tomatoes are non-GMO, low sodium, and have no sugar added.

How to make Beef in Tomato Sauce with Swiss Chard

NOTES:

  • You can use other types of meat cuts to make this beef tomato stew, like chuck steak or rib-eye steak.
  • If Serrano peppers are not available, use one Jalapeño pepper.
  • You can also use Spinach instead of Swiss chard.

DIRECTIONS:

This recipe will take less time than a regular beef stew

  • Season the meat with salt and pepper. Heat the vegetable oil at medium-high heat in a large skillet. Once the oil is hot, add the beef and cook until it is well browned. This process will take about 8-10 minutes. Stir the beef from time to time, until the meat juices have evaporated and the meat starts to brown. Browning adds more flavor to the meat.
  • Add the sliced onion and the diced Serrano pepper, and sauté for about 2 minutes.
  • Stir in the garlic and cook for about one minute.

  • Pour in the canned Organic Fire Roasted Crushed Tomatoes from Muir Glen and stir. Turn the heat up and cook for 3 more minutes. After this time, reduce the temperature, cover the pan, and keep cooking for 5 more minutes. At this time, the sauce will look a little dry, but don’t worry about it, since the Swiss chard will release its liquid into the sauce when you add it.
  • Finally, and working in batches if needed, stir in the chopped Swiss chard and the cilantro. Season with salt and pepper and cook until the Swiss chard is just wilted (about 1 to 2 minutes on low heat). Stir well, and then remove from the heat and season to taste with salt and pepper. Remember that the Swiss chard will release some liquid, so stir it well so it can blend with the tomato sauce. Serve immediately with a side of rice.

  • lb. sirloin steak diced*
  • ½ medium white onion sliced
  • 2 tbsp. vegetable oil

  • 2 Serrano peppers diced **
  • 1 Can 28 oz. Muir Glen Organic Fire Roasted Crushed Tomatoes
  • 1 bunch Swiss chard chopped and with stems removed
  • 3 Cilantro sprigs
  • Salt & pepper

  • Season the meat with salt and pepper. Heat the vegetable oil at medium-high heat in a large skillet. Once the oil is hot, add the beef and cook until it is well browned.     I made this last night but had spinach so I used that instead of the Swiss Chard. Other than that I followed the instructions exactly. It was delicious. Definitely worth it to use the fire roasted tomatoes!

    Thank you Mely! This looks wonderful and I will try it very soon. I will use kale instead and the crushed tomatoes I have are not fire roasted so maybe I'll add just a touch of liquid smoke or Worchestershire sauce! 🙂
